Homemade burgers are so much better

DSC_0047-1Those who know me in real life now that I have a potential to go wild for a lunch at MacDonalds. I always take the same menu : BicMac, Potatoes and Coke – with nuggets the most desperate days. As regular as clockwork !

But in my fact, I secretly dream that a food truck will open next to my office because what I really, really like, is a true american burger. So big you don’t know how to handle it ! With a good homemade secret sauce, and fresh french fries made of real potatoes.

Until then, the food truck is at home this week, and for the occasion, I have prepared a full list of supplies, because I will bake all the ingredients myself. All.

For 6 burger buns (full recipe here) 
240g white flour
120g brown flour with cereals
200 ml milk
8 g baker’s yeast
15g white sugar
2gsalt
2 teaspoons lemon juice
20g  soft butter
Sesame seeds or any other kind of cereal you appreciate for the topping

For homemade ketchup (full recipe here)
500g cherry tomatoes
1 tablespoon olive oil
1 tablespoon tomato purée
1 tablespoon Worcestershire sauce
1 tablespoon brown sugar
1 tablespoon cider vinegar
1 small red onion
1 pinch of paprika
1 teaspoon 5 spices mix (pepper, fennel, cinnamon, clove and star anise)
Salt and pepper

For the filling :  
6 steaks freshly  chopped by the butcher
a few leaves of iceberg salad
1 big red onion (or white)
3 sweet and sour gherkins
6 slices of cheddar
Salt and pepper

Optionnal :
6 slices of bacon
sliced tomatoes
a burger sauce made with ketchup, chopped sweet and sour gherkins, chopped shallot, Coleman’s mustard or equivalent, ketchup and coke (1 tablespoon maximum).

To make burgers that will make turn away from Macdonald’s forever (hum…) : 

I prepare the dday before the buns that I store in a box in the fridge. The ketchup can be cooked a few days before : it will have even more flavor !

For the preparations, on the day of serving itself, I chop in thin slices the onion , the salad leaves and the gherkins.

I prepare a burger sauce by mixing in an electrical heb mixer the gherkins, the shallot, one tablespoon ketchup, two teaspoons mustard and one tablespoon coke. I store in the fridge.

I open up the bun s and grill them in the toaster : they have to be slightly brown.

On the lower slice, I spread a tablespoon of ketchup, add some salad leaves and onion. On the upper slice, I spread a tablespoon of burger sauce.

I grill in a pan and on mild heat the slices of bacon. i cut them in two. They can be prepared in advance since they will warm up on the steak in the next step.

In the same pane, I cook the steaks 3 to 5 minutes on the first side. I add salt and pepper. I turn them and top them with a slice of cheddar, a slice of bacon cut in two and some slices of gherkins. I continue to cook the steak for another 3 to 5 minutes  : they should remain slightly red and the cheese should start top melt.

DSC_0038I put each steak on the lower slice of the bun, top it with the upper slice and press gently to mix a bit the sauces and the meat juice.

I cook each burger in the micro-wave for 10 to 20 seconds to soften the bread and I serve immediately with a bunch of homemade french fries (sliced potatoes cooked 40 minutes in the oven at 205°C).

Oh no, in fact, I’ll treat myself with a good vanilla milkshake !
